First-Time Ever Preparing Artichokes

I am quite the curious person. I like to ask questions sometimes. I like to experiment. And I’m down for trying anything, and for a challenge. I have eaten artichokes, but I have never prepared a fresh one. I got to tell you I was left questioning what possessed someone to crack into one and say this is edible. How did they know to get to the tiny heart of the artichoke. Regardless, I found myself with 2 artichokes in my possession. This is the end result. Even though it took some work it was quite delicious!

Stuff them Artichokes

  • 2 Artichokes
  • 1/4 cup sliced cherry tomatoes
  • 1/4 cup chopped celery
  • 1/4 cup chopped peppers
  • 1/4 cup chopped onion
  • Homemade  bacon mayonnaise
  • 1/4 cup slivered almonds
  • Paprika
  • 2 tbsp First-Pressed Olive Oil (so many people use junk olive oil, look for a harvest day. Extra-Virginity is a great book)
  • Juice of 2 lemons
  • Italian seasonings

To Make: To prepare the artichokes, cut off the tips of the leaves. Now cut off the tops of the artichokes. Now bath the artichokes in a mixture of water and 3 tablespoons of lemon juice. While they’re soaking begin chopping up your vegetables and prepare your mayonnaise if you already haven’t done so. Mix your stuffing: tomatoes, celery, peppers, onions, almonds, mayonnaise and paprika. Remove the artichokes. Cut in half. Rub lemon juice on the outside. Take a spoon and dip out the choke (all the fuzzy looking stuff). Take your stuffing and begin layering it between the leaves and in the middle. Get a pan, I used a cast-iron skillet. Put a little water in the bottom and drizzle olive oil over the top. Bake at 350 degrees for 15 minutes. Now crank it up to 365 for another 15 minutes. Make a little Lemon Olive Oil Dressing by combining the lemon juice, seasoning, and olive oil. Once the artichokes come out, drizzle this over the top and you’re set to dig in and adventure into the  world artichokes
