The Best Compromise: Browkie Bars

032 - Copy

Hey brownies are good. I want brownies. Hey cookies are great. I want cookies. It’s a hard choice isn’t it? Cookies or brownies? Why choose? Let’s combine them and make the best of both worlds. A prodigal dessert child. Why make it in a skillet? Because I find it aesthetically pleasing, feel free to bake yours in whatever your heart desires.

What You’ll Need to Make

  • 1 1/2 cup almond flour
  • 1/3 cup raw honey
  • 1 egg
  • 1/8 cup melted coconut oil (I think ghee would be good here if you’re more lenient with your dairy)
  • 1/2 cup unsweetened cacao powder
  • 1/4 tsp unrefined sea salt

  •  1 1/2 cup almond flour
  • 3 tbsp coconut milk
  • 1 1/2 tsp vanilla
  • 6 tbsp macadamia nut oil

To Make: Let’s do this simply. For the brownie mix the wet ingredients (honey, egg, oil). Now stir in the almond flour, cacao, and sea salt. Pour into a greased skillet. Bake at 350 for about 20 minutes. Until a toothpick comes smoothy out of the top. Meanwhile Mix the cookie ingredients. Once the brownies have cooled a little. spread the cookie mix on top. Refrigerate to set up. Now you have the both of best world, plus you have more a cookie dough, than an actual cookie (which I don’t know about you, but when I was a child I much rather preferred the dough to the actual cookie)!
