Whoops Strawberry Crumble

030Sometimes I have great concepts, but they don’t always pan-out like I dream. Thus is life. Or in some instances my impatience (to research or in actually measuring and not just tossing things in a bowl) gets in the way. Here both were the cause of this dessert. But in all honesty, this mistake was meant to be because they turned out better than the original. Don’t stress when something doesn’t turn out how you want it to. Dig deep, get creative, and turn it into something better!

Whoops Strawberry Crumble

  • 1 1/4 cup almond flour
  • 1/4 cup raw honey
  • 1/4 tsp baking soda
  • 1/8 cup melted coconut oil
  • 1/4 tsp unrefined sea salt
  • 1 tsp vanilla
  • Sea Salt
  • 1/2 cup diced strawberries (plus another 1/2 cup)
  • Chocolate Ganache (1/4 cup raw honey, 1/4 cup cocoa, 1/2 cup coconut oil)

To Make: Make cookies by adding flour, baking soda, and sea salt. In another bowl add coconut oil, honey and vanilla. Combine the two bowls. Fold in strawberries. Form into cookies, placing on a cookie sheet. Bake at 325. This is where the whoops comes in! These became a droopy (yet chewy) mess. I improvised by dicing up some more strawberries into a bowl. Crumble the sloppy cookies over the top. Whip up some chocolate sauce in the processor with honey, cocoa and coconut oil. The whipped cream was coconut milk which has been refrigerated with the top removed. Add 1 teaspoon of vanilla and 1 tablespoon of maple. Whip for 5 minutes or so until you get peaks. Dollop this on top and drizzle chocolate over the top. What do you know you now have turned a mistake into something, not only edible, but better than the original intent.
