This is my version of a hamburger casserole. The first time I made it, my brother-in-law could not stop exclaiming how fire it was. He crushed the whole sample plate. It is pretty freaking good!
Hamburger Casserole
- 1 lb ground beef
- 4 slices chopped bacon
- 2 tbsp chopped onion
- 1/4 cup chopped green onion
- 1 lb cauliflower rice
- 8 oz can tomato sauce
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp chili powder
- 1/8 tsp garlic powder
- 4 oz shredded cheddar cheese
Lets Make it Happen: In a large skillet, brown the hamburger, bacon, onion, and green pepper; drain the fat. Add all of the remaining ingredients except the cheese. Mix well; cover and simmer about 15 minutes, until the cauliflower is tender, stirring occasionally. Sprinkle the cheese evenly over the ‘rice’. Cover the skillet and turn the stove to the lowest heat. Cook about 5 minutes, or until the cheese is melted.
