Dairy-Free Cauliflower Pizza


Cauliflower Pizza crust has been my go-to option pizza option over the years, but this weekend I decided I wanted to cut out the cheese. Thus, this delicious pizza pie was created. So good. For an hour afterward, Tab and I reflected in awe about how good it was. We would be silent or watching a movie and randomly blurt out: man that pizza was the shit. It was our first dinner together since I’ve been crashing there. My take is that if this is the first thing we made, think of the potential of great dishes we can make. Wow, wow, wow this was divine, any cheese would have taken away from the great flavor.

Paulin Paleo Pizza

  • Cauliflower head
  • 1 tbsp coconut oil
  • 2 eggs
  • Tomato sauce
  • Yellow squash
  • Red onion
  • Sliced mushrooms
  • Diced tomatoes
  • Sausage
  • Bacon

Let’s Make It Happen: Finely process the cauliflower.  Line pizza pan with foil and heat in the oven at 400. Nuke the cauliflower for 4 minutes. Pat dry the cauliflower. Stir in 2 eggs and melted coconut oil. I threw in some Trader Joe 21 seasoning as well. Pat evenly into the pizza pan. Bake at 425 until it is lightly golden. Meanwhile prep your toppings. I cooked the sausage in bacon in one pan (note the sausage was ‘hot’ which I think really added to the flavor of this dish). Toss veggies in grass-fed butter and salt. When the crust is done layer: sauce, tomatoes, veggies, sausage, and finally bacon. Place back in the oven for another 5 minutes at 350. Remove and eat! We crushed this pizza in no time, unbelievably yummy, so much so that we have scheduled a once-a-week pizza night.
