These little bites I threw together for a birthday dinner last week. They were a big SUCCESS, so I thought let’s do it. Add them to Delishmas and let them bring joy to the holiday season. They are easy to make. They have bacon. All you have to do is pop one in your mouth. They’re perfect for parties and dinner sides. Hello, they are a freaking gift worthy giving. The gift of yummy food moans.
Sweet Potato Bacon Bites
- 1 sweet potato, skinned and cut into discs
- 10 slices of bacon (or more depending on how many people you plan on serving)
- 1 tbsp cinnamon
- 2 tsp coconut sugar
Let’s Make it Happen: the hardest part of this recipe is right here in the beginning, skin the sweet potato. Cut into thin discs. Spread onto a pan. Sprinkle with cinnamon and coconut sugar. Wrap each disc with one slice of bacon. Bake at 350 for 30 minutes or until tender (for us we filled the time with a rousing, fun game of apples to apples). Remove, give them time to cool a bit, and then bite in.
