Last week I added yet another cookie exchange! Not just an event for the sweets, but a time to gather with the women in my family. As the Paulin’s are more spread out across the country, a cookie exchange is a fun, competitive way for us to get together chat, drink wine, chill in our pajamas, and have a blast. No cookie exchange is complete without rousing game of charades. This cookie exchange the stakes were higher, with a big trophy lure and the notoriety of being top baking dog. On the flip side there is the title of worst cookie. No one wants to win worst cookie. Therefore everyone is on top of their game to create their best cookie. Lucky for me Aunt Toni her chocolately cookies won her the prized nutcracker and Jacki’s friend Erin laid her taste buds on the line to judge the contest, while we all stared at her while she munched. I know, absolutely no pressure there.
I couldn’t decide on which cookie to bring. Naturally it’s going to be gluten-free, but how do I narrow down my choices? I don’t! Originally I had planned a brownie, chocolate chip, no- bake combo cookie, but since we had to print out recipes to give to everyone I thought the list of ingredients alone would be daunting. Therefore I did a little editing and wound up making a Combo Chocolate No-Bake Cookie. A mix of flavor and texture, how could these not be amazing? A lot of times I honestly don’t eat the things I bake, I go by feel alone. I just know what I’ve made is awesome. I also judge by smell and oh boy did these cookies smell good. A little crispy cookie on the bottom, a little gooey no-bake on top you’ve got the best of two classic cookies with a twist. Hooray for new traditions!
Combo Chocolate No-Bake Cookies
- Nutty for No-Bakes
- 1 1/4 cup almond flour
- 1/4 cup honey
- 1/8 cup coconut ghee or ghee or coconut oil or lard or bacon fat or grass-fed butter
- 1/4 tsp sea salt
- 1/4 tsp baking soda
- 1 tsp vanilla
- 1/2 cup Enjoy Life Chocolate
Let’s Make it Happen: Start by making the chocolate chip cookies first. Mix almond flour, sea salt, and baking soda. In a seperate bowl stir honey, melted oil, and vanilla. Combine both bowls thoroughly. Fold in the chocolate chips. Form into cookies. Place onto a greased cookie sheet. Bake for about 10 minutes at 300. Place on a cooling rack. Click the link, meanwhile, to make the no-bake cookies. Spoon little bits of no-bake on top of the chocolate chip cookies. Allow time to set up. Take with you, spread the joy!
Bonus this time we had a whole plate of gluten-free cookies! (it’s not just me)
