Lavender Lemon Muffins

376Today is round #2 of lavender week! Muffins, I make some tasty muffins, why not add a little lavender to my muffin mix? Exactly there is no reason not to try! While at it why not combine it with a flavor like lemon? I thought of making lavender lemonade, why not put it into edible muffin form. This is actually pretty easy to make. So tasty. Plus it fills the kitchen with the most delicious aroma.

Lavender Lemon Muffins

  • 1 cup almond flour
  • 1/8 cup local maple
  • 1 egg
  • 1 egg white
  • 1/4 tsp baking soda
  • 1/2 tbsp lemon juice
  • Pinch of Salt
  • 1 tbsp melted coconut ghee
  • 1 tbsp lavender
  • 1 tbsp lemon zest (why not add another tablespoon for a garnish)

How to Make it Happen: Preheat oven to 350.  In one bowl combine the dry ingredients: flour, baking soda, lavender, and salt. In another bowl mix maple, egg, egg white, lemon juice, lemon zest, and oil. Now simply join the two bowls together. Scoop into cupcake liners. Sprinkle a little more zest onto the tops. Mine made a nice batch of half a dozen. Bake for about 25 minutes. Cool and EAT.
