Blueberry Chicken Salad

005As I stood looking at what was left of my beautiful whole roast chicken, I thought: what now? With just a little bit left, what can I create? So much potential. Which route to take? What do I want to munch on post bike ride and yoga flow morning? Intuition: let’s make chicken salad. And here you have the result. A yummy salad, snacked on with celery sticks, post yoga. This is another one of those great go-to recipes because you can tailor it for your own liking. It is pretty open to interpretation. You can make it just with eggs. Or maybe with tuna. Or maybe with salmon. Or maybe turkey. You may cut out the celery. You may add peppers. You may replace the almonds with pecans. You may add bacon. You may change-up the spices you use. You may spread it on Paleo bread. You may scoop it onto a granny smith apple. You may just shovel spoonfuls of it into your month. Get creative!

Blueberry Chicken Salad

  • FitViews Easy Paleo (so simple and easy to make, plus a GREAT site, I improvised myself here and used macadamia nut oil)
  • Shredded Chicken
  • 3 hard-boiled eggs
  • Chopped Celery
  • 2 fresh squeezed lemons
  • 1 tsp mustard
  • 2 tsp peppered bacon salt
  • 1 thinly sliced scallion
  • 1 tbsp dill
  • 2 tbsp parsley
  • 1/4 cup blueberries
  • 1/8 cup slivered almonds

Let’s Make it Happen: this is simple, just assemble kind of recipe. Begin my making the mayo and hard boiling the eggs, giving them time to set up and cool. Chop eggs. Shred chicken. Fold with the mayo. Add the remainder of the ingredients. Store in a container. Scoop with celery. It’s really as easy as stirring it in a bowl. Enjoy and enjoy the beautiful weather!
