Caramel Apple Nachos

This lovely little recipe I made for my little nephews (see below) a few years ago. What a beautiful fun Fall recipe. Yes caramel apples are the tradition, but what if we deconstructed the caramel apple so to speak?

What a fun little weekend treat too!

Caramel Apple Nachos

  • 1 granny smith apple
  • 1/4 cup Enjoy Life Chocolate
  • 1/8 cup chopped pecans
  • 2 tbsp whipped coconut

Caramel Drizzle

  • 3/4 cup cashew butter
  • 2 tbsp ghee
  • 1/2 tsp vanilla
  • 1/3 cup honey

Let’s Make it Happen:

First your going to have to do the apples. Notice that this is a longer practice. I  would put them on the night before to dehydrate.

Slice apples as thinly as possible. Brush with lemon juice. Sprinkle with cinnamon and a tiny bit of coconut sugar. Arrange evenly in a dehydrater (or in your oven on the lowest setting). Allow to dehydrate overnight or until they are crisp all the way through.

Make caramel by heating up the ingredients. Set aside and allow them to set up.

Melt the chocolate. Drizzle over a bed of apple chips. Sprinkle with pecans.Dollop on the whipped coconut. Drizzle caramel over the whole thing.

Boom there you have it: apple nachos!
