I have been on a soup kick! Maybe the temperature drop this weekend has inspired me. Maybe it was Saturday morning, which I spent outdoors (joyfully) at the market freezing balls. Maybe it was yesterday morning, which I spent in the woods, peacefully waiting in stillness for a deer to appear. Maybe it’s because I’ve been serving so much soup, that I finally caved and decided I need to eat some soup. Maybe it’s all the pumpkin I have, because today’s pumpkin soup is an evolution from the one I made the other day.
Whatever the reason (probably I dynamic mix of all of these and more), this soup hit the spot. Soul warming and so, so tasty. Slurp up!
Pumpkin Kale Falltastic Soul Soup
- 3 cups pumpkin puree
- 2 cups broth (like always feel free to make your own)
- 1/2 lb. ground sausage
- 1/2 sliced red onion
- 2 tsp minced garlic
- 1 cup cooked quinoa
- fresh parsley
- 2 tbsp honey
- sea salt
- pumpkin pie spice
- red pepper
Let’s Make it Happen: Cook quinoa by bringing 2 cups water to a boil with 1 cup quinoa. Turn down to a simmer until the quinoa soaks up the water and is translucent. Brown sausage. Saute onion and garlic in coconut oil or bacon grease. Get the base going by putting the pumpkin and base in a pot on low medium heat. Shred up some kale to go in it. Sprinkle in all the seasonings and spices (note there are no measurements, go with the gut and your feelings here, flavorings are a way to add some personality). Add the quinoa, sausage and onions. Allow it all to cook. Spoon it out and enjoy!
