S’Mores Pie

Gluten Free S'Mores PieSThis is one of my favorite recipes EVER! It actually kind of, sort of inspired me to start my own baking business. I served it up on Thanksgiving once and my friend Sharon, her sister and mom all exclaimed that I needed to kick the kettlebell training thing and start my own bakery. Fast forward a few years and I have the humble beginnings of a baby bakery business. I’ve been inspired lately by this campfire Autumn inspiration. The weather and days have been PERFECT. I’ve had day after day of gorgeous photo taking on my hikes or bike rides. I’ve started to deck myself out in plaid, knit hats, scarves, all the fabulous sweaters I bought last year, and once or twice some leg warmers. Plus I have filled up on quite a bit of soup. And the leaves haven’t even started to really change. What goes better than s’mores this time of year?  I like a twist, so I decided to make a pie. It was work, but completely worth the effort. Thanks to Urban Poser for the marshmallow recipe!
grahamGraham Cracker
• 2 cups almond flour
• 1/4 cup coconut flour
• 3/4 tsp gelatin
• 2 tbsp raw honey
• 3/4 tsp baking powder
• 1/2 tsp baking soda
• 1/4 tsp salt
• 1/8 tsp cinnamon
• 6 tbsp cut grass-fed butter
• 3 tbsp raw honey
• 3 tbsp coconut milk
• 1/2 tsp vanilla
To Make: In a food processor, pulse flours, gelatin, 2 tablespoons honey, baking powder, baking soda, salt, and cinnamon. Pulse in butter. Lastly pulse in the remaining ingredients. I put it between two greased pieces of parchment paper, rolled it out, the cut it into graham cracker squares (take the top parchment off). Bake at 350 until golden brown. Let cool, crumble and pat into a pie pan. Layer one done.
puddingPudding Filling
• chocolate ProDessert Pudding
• Whip Cream
• 1/3 cup coconut milk
To Make: Whip all ingredients, dish into pie crust, and the second layer is done!
ganacheGanache Layer
• 1/2 cup raw honey
• 1/4 cup coconut oil
• 1/2 cup unsweetened cocoa
To Make: Process coconut oil an honey. Add Honey. Spread over the fluff. Third Layer done!
fluffMarshmallow Fluff
• 1 cup water
• 1 cup raw honey
• 1 tbsp gelatin
• 1 tsp vanilla
• dash of salt
To Make: Put half the water and gelatin in a standing mixer. Put the remaining ingredients in a saucepan. Bring to boil and continue to cook on a medium heat until it reaches the soft ball stage. Slowly pour into gelatin mixture while mixer is on low. Turn it up to high. Let it go until it starts to fluff up. Layer 4 done, the pie is complete!slice
