Pumpkin Cranberry Bread Pudding

5It’s been a week, since I’ve posted a pumpkin recipe. This one is decadent. A yummy cranberry pumpkin bread pudding.

Pumpkin Cranberry Bread


2 eggs
1/2 cup pumpkin puree
1/3 cup raw honey
4 tbsp coconut oil
2 tsp vanilla
2 1/2 cup almond flour
1/2 tsp baking soda
1/4 tsp salt
Seasonings: cinnamon, cloves, ginger
1/2 cup chopped cranberries
Let’s Make it Happen: Mix dry ingredients in one bowl and wet ingredients in another. Combine the two bowls. Fold in cranberries. Bake at 350 until a toothpick comes out clean (at least 50 minutes). Let cool before cutting into cubes.

1 can coconut milk
4 eggs
1/3 cup raw honey
1 tbsp vanilla
Let’s Make it Happen: Mix all the ingredients, pour over the bread.

Pecan Topping
• Pecans
• Caramal (1/3 cup honey, 1/2 cup maple in saucepan to soft ball. Add 1/2 tsp baking soda)

To Make: Drizzle caramel on top and sprinkle pecans. Bake at 40 minutes at 350. Remove, here I took some of my caramel froze it and served it as ice cream on top.
