Cashew Butter Chocolate Chip Cookies

I am so sorry for all the hit-and-miss, absences lately. As you can see, last week I was tucked away in the gorgeous Rocky Mountains for a beautiful little wedding. Family time and exploring took president. Have no worries, a trip to Colorado has inspired me. For when I am in Nature, I am most in awe and most creative. Besides that Colorado knows what’s up. They are hot on the Paleo/Gluten-Free trail. Therefore, I did some taste-tester, some sampling, and some comparisons. Many restaurants ordered gluten-free menus (a plus for our crew since we have at least 2 with Celiac’s). And the Cute little coffee cafe we frequented, also had gluten-free offerings (like cookies made in Boulder and Gluten-free bagels to be made into breakfast sandwiches)

Also before leaving town I was in the mist of changing jobs. Just when my life seems routine, I will have a big change. Last winter market I was moving. Now at the first market, I am in the middle of a career change. Needless to say I busted my butt for two weeks previous to leaving by working BOTH. Now you can find me residing at Fifi’s in Terre Haute. Local baker, and some of my gluten-free items 🙂 (I know cool right?). I am always looking at ways to grow and expand. I want to evolve in life. To learn and challenge myself. To push my comfort zones. To stride further. To feed my curiosity. Risk over safety. I want the most out of this life. And lately I have been channeling how to expand my baby little bakery business. A message from a Chicago Gluten-Free Co-op. Comments on other markets. Seeing what Colorado had to offer. How can I grow and expand Bliss Delish?

Well to start I may need to get in the kitchen. Get to the market this week. Create. Make recipes. Connect. Connect. And Connect MORE!

So here I am today, back to my writing and blogging, another place that holds my heart. I fully believe in finding out what you are passionate about in life. Be passion-driven. I have sought and  found mine! Hiking, writing, cooking/baking, and family/friend time is where it’s at for me. I focus on spending my time, implementing and fueling these passions. I want to thrive, feel fulfilled, and experience that blissful state. I want to live in that state!

Last night I put some things in a bowl until my intuition kicked in, so here are the results.

Cashew Butter Chocolate Chip Cookies

  • 1/2 cup Cashew Butter
  • 3/4 cup Almond Meal
  • 1/4 cup Coconut Sugar
  • 1 tbsp Maple
  • 1/8 cup melted Coconut Oil or Ghee
  • 1/3 cup Enjoy Life Chocolate Chips
  • 1/4 tsp Baking Soda
  • 1/4 tsp Sea Salt
  • 1 tsp Vanilla

Let’s Make it Happen: Preheat oven to 350. Mix baking soda, sea salt, coconut sugar, and almond meal in a bowl. In a separate bowl combine cashew butter, maple, coconut oil, and vanilla. Combine the two bowls. Fold in the chocolate chips. Bake for 8 to 10 minutes or until lightly golden. Enjoy!!!
