1525376_10101096367403203_7238498976344723174_nOkay so obviously change is in the air. It is October. The leaves are beginning to change. The temperatures are dropping. Last week we had a rad eclipse. Symbolism everywhere. Do we embrace the change or fight it?

As you can see the above post on my Facebook represents my thoughts perfectly. So In the last week I have been transitioning a relationship. The market is dwindling and I am brainstorming and soul-searching my next move. I cut 4 inches and all the dead ends off my hair, as well as covering up the purple. I got fitted for some new contacts, since I’ve been rolling in glasses for a month +. The changes are rolling in. My calendar is rapidly stocking up events for the coming season. Parties, adventures and scheduled sweats are popping up daily. And so you can see I am leaning into my loved ones and embracing the change. Seek it and you shall find.

Also with the changing seasons, are the change in food. Fall flavors are in full force. My apartment and our restaurant at work are filled with the smells of Fall. The other day Jackie told me my apple pie tasted like Fall. What a rad freaking compliment and way of putting it!

A few weeks ago, while reading my meters, I began conceptualizing a fruit pizza. That weekend I made it happen for the market. Last week I had an extra crust left. I was determined to make a caramel apple pizza. Here you have it!

Caramel Apple Pizza 

Crust:

  • 1 1/2 cup tapioca flour
  • 1 tbsp coconut flour
  • 1/2 cup water
  • 1/2 cup melted ghee or coconut oil
  • 1/4 cup coconut sugar
  • 2 tsp cinnamon
  • 1 egg

Filling:

  • 4 oz. Cream Cheese
  • 2 tbsp caramel (the Urban Poser has a phenomenal recipe)
  • 1 tsp cinnamon
  • 1 tbsp coconut sugar

Topping:

  • 2 apples
  • 1 tbsp ghee or coconut oil
  • 4 oz. pecans
  • 1 tsp cinnamon
  • 1 tbsp coconut sugar

Toppings:

  • Urban Poser Caramel
  • Enjoy Life Chocolate Chips

Let’s Make it Happen: Mix crust ingredients. Bake in a spring pan at 400. Flip it once it has set up enough to. Allow to bake until it is golden brown and a little toasty looking.

Work on those apples. Slice thinly. Toss in coconut oil with coconut oil, pecans, cinnamon and coconut sugar.

Process the filling ingredients.

Assemble. Smooth filling over the crust. Spoon apples on top. Drizzle with caramel. Sprinkle with chocolate chips.
