Sweet Potato Bacon Quiche

So I had a fantastic Valentine’s weekend! I hope you did too. If anything it showed me that I am definitely loved, spoiled and pretty blessed. To me life is connection. Especially since I grew up really shy, I denied myself a lot of really good human connection. Stuff, things, they change. They always leave us wanting more. They upgrade. They do not bring us joy or happiness. They only bring fleeting, momentary pleasure. And then we move on and want something else. There is something more to connection and relationships. They fuel us. They can energize us. They are necessary. Something I have really learned the last year is that we really need each other. Post break-up my friends and family were there for me. For talks. For walks. For letting go. I leaned into them. And when they need me, they can lean into me. That is life. The ebb. The flow. The conversations. The give and take. The fragile balance. At all of our core is the desire to feel like we matter and that we are loved. Who doesn’t want to be loved? I do. Give love. Receive love.

This little not and gift I found in the window outside my door. It just made my heart smile. To have such creative people in my life. Who take the time to do something for me. That is what gets me, that’s my love language. Time. Time with people. Someone taking time to do something for me. To make something. To talk to me. To write something. Small, but heart-filing. This made my day. Add to this, that I walked into my apartment to prepare a brunch for a friend of mine. Good food, conversation, and a walk in the snow. These are the things I want and need in my life. They fuel me. They fill me with gratitude.

Not to mention, I am a tough critic for myself, but I loved this quiche. The sweet potato crust. The bacon and ham. The goat cheese. So tasty and eaten in good company to boot!

Sweet Potato Crust

  • 2 cups sweet potato
  • 1/2 cup tapioca flour
  • 1 local, pasture-raised egg
  • 1 cup coconut flour
  • 1 tsp sea salt

For the Quiche

  • 5 local, pasture-raised eggs
  • 1/2 lb. bacon chopped
  • 4 oz. ham
  • 1 cup chopped spinach
  • 1/4 cup thinly sliced red onion
  • 1 tbsp garlic
  • 4 oz. goat  cheese

20160214_132708Let’s Make it Happen: Begin with the crust. Pulse the ingredients in a food processor. Pat into a greased pie pan. Bake at 375 while you prepare your other ingredients.

Crisp bacon and ham. Saute the red onion, garlic and mushrooms in a little of the bacon grease. Whisk the eggs. Sprinkle in a little salt and pepper. Add the remaining ingredients. Pour into the sweet potato crust. Crumble goat cheese on the top. Bake for 20 minutes or until the goat cheese is slightly browned and the eggs are no longer runny. Slice and enjoy! We enjoyed our brunch quiche with some chopped fruit and mint!
