Cheesy Gouda Broccoli and Crispy Bacon

2015-04-11-07-58-38.jpgSo I love bacon. It is no secret. I work at a place known for bacon. I have actually learned how to smoke it and have become the bacon slicer. I even get fancy and where the bacon socks that my friends got me for Christmas (they are so wonderful). Broccoli and bacon are one of my favorite things to eat.

This last week as I looked at my typical skillet of broccoli and the crispy  bacon I have on the sidelines ready, I think I need to spice it up a little bit. What if I add a little of that smoked Gouda I have in the fridge? Jackpot!! So unbelievably filling too. I was maybe a little too stuffed, and should have gave myself time to feel my fullness, rather than just enjoy the taste. But it was sooooooooooooo good!

Cheesy Gouda Broccoli and Crispy Bacon

  • ¼ lb. chopped, crispy bacon
  • 1 floret of broccoli
  • 2 oz. of smoked gouda cheese
  • Salt and pepper to taste

Let’s Make it Happen: Preheat 350.

Chop bacon. Crisp. Set aside on a paper towel.

Slice broccoli. Heat a skillet with some of the excess bacon fat. Season with salt and pepper. Continue cooking until the broccoli is tender.

Place broccoli in a baking pan. Sprinkle bacon on top. Chop up the cheese and do the same thing. Bake until the cheese is melted.

Super duper easy and filling. This is how I like to eat. Real simple.
