This recipe I was most excited to make! I love pecans. I love chocolate. That’s two out of three major ingredients, so I believed I was due to make something stellar.
This also kicks starts the theme of this week: cranberry.
I have three lovely cranberry recipes coming your way. But I started with the best first. You still have two more days to prepare and get it together so you can impress with this beauty on Thanksgiving. Plus you get to be the showstopper who brought something different and unique.

Chocolate Pecan Cranberry Pie
- use your favorite crust recipe
- 3 eggs
- 3/4 cup coconut sugar
- 3/4 cup honey
- 3 tbsp tapioca flour
- 1 tsp orange peel
- 3/4 Enjoy Life Chocolate Chips
- 1 cup chopped pecans
- 1 cup cranberries
How to Make it Happen:
Make pie crust. Divide into small balls. Flatten out. Press into the bottom of a mini pie pan. Flute the edges.
Whisk the eggs, coconut sugar, honey, tapioca flour and orange peel. Fold in the chocolate chips, cranberries, and pecans.
Evenly spoon into each pie. Bake at 400 for 30 minutes, so the chocolate is melted and the filling is no longer jiggly.
Allow it to cool and set up. Eat and enjoy!!!
