Since the Super Bowl is this weekend, I figured I’d better start playing with some possible recipes for the day. When I saw a football-shaped meatloaf, I knew I wanted to play around with the recipe. Plus growing up, my granny made a bomb meatloaf and it’s not something I make often, but something I really enjoy!
Note that I attempted to make the laces out of bacon but you could also use cheese to shape them, we are limiting our dairy, so I needed to find an alternative. It definitely added a great taste, granted I love bacon, so I am partial.
This was also really easy to prep and didn’t take a lot of time to assemble, so you don’t have to spend all morning in the kitchen. You can spend your time getting pumped for the game instead!

Gluten-Free Football Meatloaves
- ½ cup coconut sugar
- ½ cup paleo ketchup
- 1 lbs. ground beef
- 1/2 cup coconut milk
- 2 eggs
- 1 ½ tsp sea salt
- ¼ tsp black pepper
- ½ onion, chopped
- ½ cup crushed almonds
- 2 cloves garlic, minced
- 2 pieces of bacon
How to Make it Happen:
Preheat oven to 350.
Mix coconut sugar and ketchup. Place on the bottom of your baking pan (reserve a little to put on the top).
Run the almonds through your food processor.
Mix the rest of the ingredients with your hands. Shape into two football-shaped loaves. Layer some bacon on top to resemble laces.
Bake for 45 minutes (or until the center is no longer pink), time depends on the size of the meatloaf. Zach’s was bigger than mine and required more time.
Plate and sit back and enjoy the game!
