Gluten-Free Super Bowl Calzones


I love pizza. I love pie. Clearly, my website and brand are Polifroni’s Pies and Pizzas. So making fooball-shaped calzones for the Super Bowl seemed like a complete no-brainer.

Feel free to fill them however you want. We are limiting dairy, so I vetoed any cheese in the center. For some reason I was carrying pepperoni with me at the store, but I did not come home with any? Weird. But my dream calzone would be this: bacon crumbles, sausage and pepperoni. A meat lovers sort. I would add black olives for my husband.

This sausage only one however was still absolutely delicious and I am sure would be a crowd pleaser.

  • 1/ 2 cup marinara sauce
  • 1/2  lbs. sausage


  • 1 cups tapioca flour
  • 2 tbsp  coconut flour
  • 1/2 tbsp baking powder
  • ¼ tsp sea salt
  • 1/2 cup coconut milk
  • 2 tbsp lard


How to Make it Happen:

Brown sausage and set aside.

Preheat oven to 425.

Mix all the dough ingredients in a mixer with a hook attachment. Wrap and refrigerate for 30 minutes. Divide into 4 balls. Roll out into a oval shape on a floured surface.

Spread marinara sauce onto one side, making sure to leave a border around the sides to seal the calzones later. Layer sausage on top. Place another piece of dough on top. Use a knife to cut the parameters to look like a football. Use a fork to go around the outside and seal the two sides together. Cut slits on the top to look like laces. Brush with egg.

Bake for 35 minutes until golden brown.

Serve and enjoy!!
