Holidays can be a nice reminder, but remember that love and gratitude for that love is something you DO everyday. A cycle of unconditional acceptance. Quick forgiveness. And contentment with your partner. Be thankful for them everyday. I look at my husband every day with such appreciation. How much better he makes my life. My only goal now is to be the best wife I can be.

Chocolate Strawberry Pies

Chocolate Pie Crust

  • 1 cup almond flour
  • ½ cup tapioca flour
  • ½ cup unsweetened cocoa powder
  • ½ cup butter
  • 1 egg
  • 1 tbsp coconut sugar
  • ½ tsp sea salt

Filling:

  • 4 cups strawberries
  • 2 tbsp tapioca flour
  • 2 tsp vanilla
  • 1 tbsp lemon juice
  • 1/4 cup honey

How to Make it Happen: 

Blend all your crust ingredients in a food processor until it forms a ball. Chill for 30 minutes. Roll out onto a sheet of parchment. Either make it into one large pie or divide it into 8 balls for mini pies. Flip over into the pan. Pat, fix and flute. Place back in the fridge while you prep the filling. If you want letters. I cut mine out and froze them, and then just plopped them onto the pies.

Dice strawberries. Place all ingredients in a saucepan. Cook on a medium heat until it begins to thicken. Cool. Dish into the pie crust, spread evenly. Top with letters.

Bake for 30 minutes. Cool. Slice and enjoy!!
