This pork recipe is so good! I made these originally with the intention of making wraps, which I did.
But then I also decided to make BBQ Pulled Pork Pizza.
It made enough to share with my mother. And Zach and I have been able to eat off of it all week.
Zach said this is some of the best pulled pork he has ever had and he wanted to make some for the boys. I found a guideline for a pulled pork and tweaked some of the ingredients.
Seriously, so so good and there are so many options you can make. Make some sliders. Stuff it in a baked sweet potato. Stuff it in a pepper. So many options.
- Pork Butt
- 1 orange
- 1/8 cup lemon juice
- 1 onion, diced
- 2 jalapenos, diced
- 3 tbsp extra-virgin olive oil
- 1/4 cup tomato paste
- 1/4 cup coconut sugar
- 1 tbsp cumin
- 2 tsp salt
- 2 tsp oregano
- 1 tsp chili powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp pepper
Sear the pork on all sides in some bacon fat (thanks and props to my husband for doing this for me, he’s a boss in the kitchen). Allow it to cool slightly. Mix all of the rub ingredients together. Smear and massage it into the butt. Place it in the crock pot.
Cut orange in half and squeeze over the butt, as well as the lime juice. Dice your onion and jalapeno. Mince the garlic. Spoon all this on top of the butt. Place the lid on the crock pot. Cook on low over night.
In the morning, shred the pork (remove the larger pieces of fat first, be careful though because it is truly falling apart). Cook for another 30 minutes.
Preheat the oven to 450. Bake for 20 minutes (make sure to reserve the juice for later). Toss and add a little bit of juice. Bake for another 20 minutes. Broil for 10 to 15 minutes, depending on your preferred crispiness.
Serve and eat however you like. Save the rest. Or even better, share!
