Loaded Mashed Cauliflower Meatloaf Casserole


  • 1 1/2 lb. ground beef
  • 1 tbsp. coconut sugar or brown sugar Swerve
  • 1 cup pork rinds, ground
  • 2 eggs
  • 1 tbsp. mince garlic
  • 1 1/2 cup cheddar cheese
  • 1/2 lb. bacon
  • optional: green onion chopped
  • salt and pepper to taste

Mashed Cauliflower:

  • 1 head cauliflower
  • 2 oz. cream cheese
  • 1 tbsp. sour cream
  • 3 tbsp. butter
  • salt and pepper to taste

To Make: Preheat oven to 400.

Boil cauliflower until tender (soft). Drain in a strainer. I also took a paper towel to get some excess water off. Pulse in a food processor with the remaining ingredients. Set aside.

Cook bacon. Crumble. Leave about 1-2 teaspoons of bacon fat in skillet. Sauté garlic for a few minutes (feel free to add onion if you want as well). Pulse pork rinds in a food processor. . Use your hands to mix all the meatloaf ingredients minus the cheese and bacon. Pat into a casserole pan. Layer with 1/2 cup cheese. Spoon and smooth mashed cauliflower over the top. Sprinkle with cheese and bacon. Cover the dish with foil. Bake for 20 minutes. Remove foil, bake for 20 more minutes. Remove from oven and allow to cool a little before plating and serving. Make sure the hamburger is no longer pink in the center to make sure it is done. AND that the cheese is completely melted. Feel free to garnish with some chopped green onion.
