Gluten-Free Roasted Cherry Shortbread Cookie Sandwiches

When you are a baker, when you show up to events you should bring a baked good. It has taken me a while to realize this, even though it seems so obvious. My brain had a million (or like ten) ideas of things to make for Christmas at my grandparents.

I was really inspired by this Moose Mousse Marzipan cake I saw, with little moose cut-outs on the side. I only allotted myself one morning to bake though and this would take a long time. Plus I’d have to cut it. Plus transportation. It sounded messier and harder to serve as well.

Cookies……it’s Christmas, I should definitely make cookies.

I’ve been seeing so many mushroom cookies are my Pinterest. They’re so foresty and cute. But they’re meringue and that too takes a long time, plus assembly.

My hidden board of blog inspirations has a whole section on cookies. So many options. But I spy this one for a Spiced Roasted Cherry Cookie. Cherries are my favorite food. They’re beautiful, they’re the winner.

I was so happy with how nice looking they turned out. The reviews were that they tasted good as well. I tried a bite, I thought they were pleasant. Not overly sweet, which I like. Plus the cardamom leaves you wondering what that spice is. I ran out of cinnamon, I do think it needs a little cinnamon to balance it out. Overall, tasty, and I liked my Aunt Marti’s suggestion to eat one with a cup of coffee. It is that kind of cookie.

Gluten-Free Chocolate Cherry Pie

I love pie. I think that is pretty evident in the name of my brand and by the plethora of pies I make. I just enjoy the rusticness of them. I am a recovering perfectionist, so when I did cakes before it was easy to slip up (minus naked cakes, I am falling back into intrigue with cakes now that naked cakes have made a way. They have that rusticness too). Cakes are smooth and perfect and tedious. And pies, pie is okay for a little fruit to leak out. To me it adds color. They don’t have to be as perfect. And you can fill them with so much yumminess. I also like to eat pie. My whole life I have never liked cake. I spent a week when I was like 10 baking assortments of pie for fun, so they have always kind of had a pull over me.

I also have a thing of scrolling through food on my Instagram. One day I was stopped by a beautiful purple-crusted pie, made with blueberry powder. I had to do it. I began searching and seeking out blueberry powder or freeze-dried blueberries to pulse down.

When I finally found them, I realized there were a larger selection of fruit I could try too. I was almost giddy when I realized there was a cherry. Cherries are my all-time-favorite food. I may have eaten cherries today. How I wish their season was longer. So as always happens, my mind began racing with ideas on what to do with a cherry pie crust.

Chocolate + Cherry

You really can’t go wrong with that combo. A pinkish cherry pie crust. A cherry pie filling base. A chocolate cream pie. Whipped Cream. Shaved Enjoy Life Chocolate. WOW!

So good. This is one of those things I make that can really tempt me, so I give them away for others to sample. I think this pie ended up at my Bible Study and Zach’s Monday night men’s group. I made three pies that day and this was hands down my favorite. The whip topping adds a freshness. And as I said you can’t go wrong with chocolate and cherries together.

This pie went on to inspire the tasty banana pie I will be sharing tomorrow.

Chocolate Cherry Cheesecake Cookies

Cherries are my favorite food. As a child I was drawn to cherry flavored candies. As an adult I love the small window in the summer when cherries are in season. The window is very small though, I feel cherries have the smallest freaking season. Regardless I will confess to eating pounds of fresh cherries during this time.

So when I was deciding on cookies, I knew I had to do cherry cheesecake when I saw it pop up more than three times. I have been on a black forest/chocolate cherry combination kick though. I have a black forest galette planned for the market. So I decided to tweak the recipe and to make them chocolate cherry cheesecake. Plus I also thought back to growing up, when my mother loved some cherry cordial chocolates this time of year. I liked the combination.

Brussels Sprouts, Bacon, and Balsamic Cherries

My top favorite foods? Cabbage, bacon, cherries, Brussels sprouts, venison, grass-fed butter, macadamia nuts and more than I’m going to rattle off now. The other day while browsing the store, I was struck by a Brussels craving. Maybe (probably) because I’ve been talking about them a lot lately. I also spotted some cherries.  Hmm….why not put some of my favorites together? Here is the result:
Brussels,  Bacon and Balsamic Cherries
