Gluten-Free Hot Chocolate Peppermint Cookies

47200718_978955918981699_5066383009075167232_nThese have by-far been my favorite cookies I have made this December! Or maybe some of my favorite cookies in general, they are that good.

And I have to admit, I was terrified when I was making them. The batter smelled so strongly of peppermint, I was worried it would be over-the-top. In reality they were perfect, refreshing, and the perfect amount of peppermint.

Gluten-Free Hot Chocolate Peppermint Cookies

  • 12 oz. Enjoy Life Chocolate
  • 1/2 cup coconut oil
  • 2 cups almond flour
  • 1/4 cup cocoa powder
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup coconut sugar
  • 1/2 cup maple sugar
  • 3 eggs
  • 1 tsp vanilla
  • 1 tsp peppermint extract
  • 24, all-natural marshmallows (or make your own)

Triple Berry Thumbprint Cookies

I really loved the flavor of everything I made last week, but I also thought they were slightly monochromatic.

This week I wanted to add some colors and other flavors. Monday’s delicious cookies were Chocolate Cherry Cheesecake (click the link to check them out).

Today’s are a beautiful little thumbprint. Although I will rat myself out and confess that I didn’t allow enough time for the dough to hang out and chill, so they lost there shape a little, they were hands down my favorite tasting cookie I have made the last two weeks. Especially when they were fresh and warm.

For the dough:

  • 1 cup butter, room temperature
  • 2/3 cup honey
  • 1/2 tsp vanilla extract
  • 2 cups almond flour
  • 1/2 cup triple berry jam
  • pinch of salt

Orange Vanilla Cookies

I wanted something different from all the nut, sugar cookies I was making last week. I wanted something subtly good. Something unsuspecting. Orange is a common holiday flavor and I wanted to let it stand on its own, rather than always being paired with cranberries.

These cookies were good too. Soft. There is a hint of orange, not overpowering. Not your traditional holiday cookie. It was a nice change of pace. Maybe drizzle some white chocolate on it. Or some finely chopped macadamia nuts.

Orange Vanilla Cookies

 

  • 2 sticks unsalted butter, room temperature
  • 1/2 cup honey
  • 1 tsp vanilla
  • 1 tbsp grated orange zest
  • Pinch of salt
  • 1/3 tbsp cup tapioca flour
  • 2 1/2 cups almond flour

Chocolate Cherry Cheesecake Cookies

Cherries are my favorite food. As a child I was drawn to cherry flavored candies. As an adult I love the small window in the summer when cherries are in season. The window is very small though, I feel cherries have the smallest freaking season. Regardless I will confess to eating pounds of fresh cherries during this time.

So when I was deciding on cookies, I knew I had to do cherry cheesecake when I saw it pop up more than three times. I have been on a black forest/chocolate cherry combination kick though. I have a black forest galette planned for the market. So I decided to tweak the recipe and to make them chocolate cherry cheesecake. Plus I also thought back to growing up, when my mother loved some cherry cordial chocolates this time of year. I liked the combination.
